Exploration and scouting is key to wine selection. It needs going out of the beaten path, as Entre-deux-Mars is out of it. During a visit in Bordeaux, in 2017, I drank at a restaurant a 2005 Grande Réserve rouge; the wines was excellent, as good as a grand cru. I therefore thought: I need to meet them and know them. Today, they are at the head of Bordeaux´s dry white wine revival, their reds can compete with the best Bordeaux´s reds and they also issue some rare finds such such 100% Syrah, 100% Cabernet Franc and 100% Sémillon. Their wines are now in the best French restaurants, such as Mirazur or Coutanceau.
